Cut the stems off the shiitake mushrooms. Finely chop the stems and the onion (mijin-giri). In a bowl, combine the ground chicken, the onion, the shiitake stems, the beaten egg, the bread crumbs, and the salt and pepper and mix until sticky.
Dust the inside of the shiitake caps with the starch and stuff with the (1) mixture. Sprinkle sesame seeds over only 2 of the stuffed mushroom caps..
