How to Prepare Sardines
The flesh of a sardine is easily separated from the bone by hand. Work quickly so your body heat does not warm the fish.
Cut off the head and make a diagonal cut in the belly to remove the entrails. Thoroughly rinse in water and thoroughly pat dry.
Work your thumb along the spine to open up the fish. Break the spine at the base of the tail and slowly pull the spine toward the head to remove it.
