Onion 100 g
Starch 3/4 tsp
Sugar 1 tsp
Soy sauce 1/2 tbsp
Water 75 ml

Thinly slice the onion crosswise (usu-giri), separate each slice and coat with the starch. Cook the onion slowly in a non-stick frying pan over low heat.

When the starch becomes damp and translucent, turn the heat to medium and mix in the 75 ml of water, the sugar and the soy sauce. Remove from the heat when the liquid thickens.
