Dashi stock 4 cups

Cut the salmon into bite-sized pieces. Cut the daikon into julienne strips (sen-giri). Cut the mizuna leaves into thirds. Cut the tofu into 1-cm cubes.

In a pot, bring the dashi stock to a boil. Add the salmon and the daikon. Cook until the salmon and the daikon are done. Add the tofu, the mizuna leaves, and the grated daikon and bring the pot to a boil. Place in a serving bowl and top with the green onion and the ponzu soy sauce.
