Cucumber 100 g
Bonito flakes 3 g
Water 2 and 1/2 cups
Salt  10 g
Vinegar 1/2 tsp

Sprinkle some salt (not listed) on the cucumber, scrub with salt on a cutting board (itazuri), then wash and thinly slice (usu-giri). In a bowl with the 2 and 1/2 cup of water, dissolve the salt and soak the cucumber to pickle it.

When the brine has penetrated into the cucumber, drain the cucumber and squeeze out any excess water. Add the bonito flakes and dress with the vinegar.
