image Serve the beans with creamy egg yolk and white. Egg is the best match with crunchy string beans.
Eggs 2
String beans 10 beans
Dashi stock 2 cups
Sugar 1/2 tbsp
Light soy sauce 1/2 tbsp

Remove the ends of the string beans. Heat the dashi in a pot, add the string beans, then add the sugar and the light soy sauce and continue cooking.

When the string beans are soft, break the eggs into the pot. Cover with a drop-lid made from a sheet of cooking paper and simmer slowly. When partially cooked, flip the eggs over and cook until the eggs are half-cooked. Place the beans and the eggs in a bowl, pour in the soup and serve.
