Boil the broad beans in water until tender and drain in a colander. Remove the skins from the beans and mash in a mortar. Add the sugar and the salt and mash together until creamy and then divide into 4 portions.

Wrap each portion of the mashed beans in a rinsed and wrung-out piece of bleached cotton. Twist the cloth, unwrap and serve.
