Red pepper to taste

Cut the cabbage into bite-size pieces (zaku-giri) and lightly boil in water. Then, submerge it in cold water, drain in a colander, and squeeze out excess water. Remove the stems and seeds of the red peppers and chop crosswise into small pieces (koguchi-giri).

Mix together the red pepper, vinegar, sugar, light soy sauce, and salt in a bowl. Add the cabbage and toss. Serve on a dish.
