Pork medallion 140 g
Salt (for the pork) 0.6 g
Pepper to taste
(A) Shiro-negi (white part of a Japanese leek) 30 g
(A) Salt 0.6g
(A) Lemon juice a little more than 1tsp
(A) Sesame oil 1/2 tsp

Cut the pork into 16 pieces (4 pieces per skewer). Finely chop the (A) leek and immerse in water. Pat the leek dry with a paper towel and combine with the remaining (A) ingredients.
