Skinless chicken thigh 140 g
(A) Sake 1 tbsp
(A) Mirin 1 and 1/3 tbsp
(A) Sugar 1 and 2/3 tsp
(A) Soy sauce 1 and 1/3 tbsp

Cut the chicken into bite-sized pieces. Skewer the chicken onto bamboo skewers. Allow 2 skewers per person. For the yakitori sauce, heat the (A) seasonings in a sauce pan and reduce for a short while.

Place the skewered chicken on a baking sheet lined with tin foil. Cover the brochettes with tin foil and broil in an oven-toaster for about 8 minutes. When the outside of the meat turns whitish, brush with the sauce. Repeat when the meat is 60% cooked. When the meat is thoroughly done, brush with the sauce for the last time. Arrange the brochettes on a dish.
