Season the pork with the sake, make some holes in the shishi-togarashi, evenly all over the surface, with a bamboo skewer and separate the maitake mushrooms into small clusters.
Heat the oil in a frying pan, fry the (1) ingredients in the oil until lightly browned and remove from the pan. Set them aside.
Wipe away any excess oil in the pan and add the (A) seasonings and the starch diluted with water. Bring to a boil, return the pork to the pan and sauté while coating the pork in the sauce.
